Madeleines

4 Eggs
½ C Powdered Sugar
1 C White Flour
1 tsp. Baking Powder
¼ lb. Butter
Salt
Allow the butter to soften. Mix all ingredients together. Pour into madeleine moulds, lightly greased or Teflon™ coated. (If you don’t have these, cupcake tins will work – fill each cupcake 1/2 full. But it’s blasphemy.) Bake 15 minutes at 375°. Don’t open the oven until the 15 minutes are up.
Dust with powdered sugar and serve.
Makes 24.
